- 2 Table spoon of olive oil
- Freshly ground of black pepper
- 10 asparagus spears, ends trimmed
- 1/2 Tea Spoon smoked sweet paprika
- 10 Rounds pancetta
Preheat your oven for about 400°F. Line a baking sheet with parchment paper. Wrap each asparagus spear in bacon. Put on the baking sheet and bake for 7 minutes per side until the bacon is crispy and the asparagus is tender. Broil for the last minute of cooking to make the bacon crispy.

- 1 Head of iceberg lettuce, cut into bite size wedges
- 6-8 Strips of cooked thick cut bacon, cut into 2-inch pieces
- 10 Cherry tomatoes
- 1/2 Red onion, cut into 1-inch pieces
- 2 Avocados, pitted and diced
- Bamboo skewers
- 1/2 Cup of non-fat plain Greek yogurt
- 1/2 Cup of crumbled blue cheese
- 1/2 Cup of low-fat buttermilk
- 1 Tea spoon of garlic powder
- 1 Table spoon of white vinegar
- Salt and pepper, to taste
Onto a skewer, stack lettuce wedge, bacon pieces, onion, avocado, and tomato. Repeat to fill skewers until all ingredients are used up. Arrange skewers on plate or platter. Pour a dressing ingredients Greek yogurt, blue cheese, buttermilk, garlic powder, white vinegar, salt, and pepper into bowl or mason jar. Whisk together or shake vigorously until well incorporated. Drizzle dressing over skewers. Top with fresh black pepper.
